Spray inside of multicooker with cooking spray. Press saute button and add pancetta when hot. Cook and stir 3 minutes or until fat begins to render. Add pork shoulder, salt and pepper; brown pork on all sides, stirring frequently (about 5 minutes). Stir in tomato paste, onions, carrots, celery and undrained tomatoes. Place ham hock and thyme sprig on top then secure lid on top. Select pressure cooker function and cook 20 minutes. Once timer is up, carefully release steam and remove lid.
Remove ham hock and thyme sprig from pot and discard. Stir in gnocchi and chopped kale; continue cooking on saute function for additional 2 to 3 minutes or until kale is tender and gnocchi is cooked. Serve stew.
